Ostrich filet flame

 

INGREDIENTS:
(2 serves)

 

    • (2) 4 oz. Ostrich filet
    • salt and pepper
    • 1 clove garlic, crushed
    • 2 tbs. butter
    • ¼ cup brandy
    • ½ cup ostrich stock (may substitute beef stock)
    • 1 ½ cups sliced mushrooms
       

DIRECTIONS:
Pound ostrich filet lightly with a mallet. Season meat on both sides with salt, pepper and garlic. Melt butter in a heavy saucepan and add the meat. Saute ostrich filets on each side for about 2 minutes per side. Add brandy and flame. Remove meat to a platter and keep warm. Add mushrooms to the sauce remaining in the pan. Add stock and reduce by half. Pour sauce over meat and serve immediately.

 

     
Peppered ostrich roast

INGREDIENTS:
(5 serves)

    • 2 lb Ostrich Roast
    • 2 tbs course grind pepper
    • 1/4 tsp Garlic powder
    • 1/2 tsp salt

 

DIRECTIONS:
Place spices in a small bowl and mix well. Rub spices on all sides of roast. Microwave on high for 3 min. Microwave at 50% power for 8 min. turn roast over and microwave for an additional 8 min. (internal temp. 120f. )for rare. Add two additional min. each sides for medium( internal 135f.) add four additional minutes for well ( internal 150f.) Place a foil tent over the roast and allow to stand for 10 min. before serving.
Or......bake at 350f for 1 hour or until desired internal temperature is achieved. Caution well done Ostrich is a bit like jerky.

Stir-fry ostrich

INGREDIENTS:
(4 serves)

    • 1 lb ostrich steak, cut in 1/4" slice
    • s2 tsp cornstarch1 clove garlic, minced
    • 1/2 tsp seasoned salt1 red bell pepper, seeded and cut into strips
    • 1 green bell pepper, seeded and cut into strips
    • 2 tbsp dry sherry
    • 1 tsp ground cumin
    • 1 tsp sesame seeds
    • 1 tbsp vegetable oil
    • 1 medium onion, thinly sliced
    • 12 cherry tomatoes, halved
    • 1 tsp cayenne pepper

 

DIRECTIONS:
Combine meat, sherry, cornstarch, cumin, garlic and salt in a bowl, stir well. Heat oil over medium-high heat in a heavy skillet or wok. Stir fry meat for about 3-4 minutes. Lower heat, add remaining ingredients, cover and simmer for 3-4 minutes. Serve with rice (6 servers)

Ostrich Stroganoff

INGREDIENTS:
(2 serves)

    • 300g Ostrich fillet or steak, thinly sliced.
    • 45ml (3 level tbsp) seasoned flour.
    • 56g (2oz) English butter
    • 1 onion, skinned and thinly sliced.
    • 225g (8oz) mushrooms, wiped and sliced.
    • 150ml (5oz) soured cream
    • salt and freshly ground pepper.

 

DIRECTIONS:
Cut Ostrich into strips and coat in seasoned flour. fry the onions and mushrooms in half the butter untill soft. Add the remaining butter and meat and cook for approx 2 minutes stir in the sour cream and season well, using plenty of pepper. Heat to temperature and serve at once with rice.
