DIRECTIONS:
Pound ostrich filet lightly with a mallet. Season
meat on both sides with salt, pepper and garlic.
Melt butter in a heavy saucepan and add the meat.
Saute ostrich filets on each side for about 2
minutes per side. Add brandy and flame. Remove
meat to a platter and keep warm. Add mushrooms
to the sauce remaining in the pan. Add stock and
reduce by half. Pour sauce over meat and serve
immediately.
Peppered
ostrich roast
INGREDIENTS:
(5 serves)
DIRECTIONS:
Place spices in a small bowl and mix well. Rub spices
on all sides of roast. Microwave on high for 3 min.
Microwave at 50% power for 8 min. turn roast over
and microwave for an additional 8 min. (internal
temp. 120f. )for rare. Add two additional min. each
sides for medium( internal 135f.) add four additional
minutes for well ( internal 150f.) Place a foil
tent over the roast and allow to stand for 10 min.
before serving.
Or......bake at 350f for 1 hour or until desired
internal temperature is achieved. Caution well done
Ostrich is a bit like jerky.

Stir-fry
ostrich
INGREDIENTS:
(4 serves)
- 1
lb ostrich steak, cut in 1/4" slice

tsp cornstarch1 clove garlic, minced
- 1/2
tsp seasoned salt1 red bell pepper, seeded
and cut into strips
- 1
green bell pepper, seeded and cut into
strips
- 2
tbsp dry sherry
- 1
tsp ground cumin
- 1
tsp sesame seeds
- 1
tbsp vegetable oil
- 1
medium onion, thinly sliced
- 12
cherry tomatoes, halved
- 1
tsp cayenne pepper
DIRECTIONS:
Combine meat, sherry, cornstarch, cumin, garlic
and salt in a bowl, stir well. Heat oil over
medium-high heat in a heavy skillet or wok.
Stir fry meat for about 3-4 minutes. Lower heat,
add remaining ingredients, cover and simmer
for 3-4 minutes. Serve with rice (6 servers)

Ostrich
Stroganoff
INGREDIENTS:
(2 serves)
- 300g
Ostrich fillet or steak, thinly sliced.
- 45ml
(3 level tbsp) seasoned flour.
- 56g
(2oz) English butter
- 1
onion, skinned and thinly sliced.
- 225g
(8oz) mushrooms, wiped and sliced.
- 150ml
(5oz) soured cream
- salt
and freshly ground pepper.
DIRECTIONS:
Cut Ostrich into strips and coat in seasoned
flour. fry the onions and mushrooms in half
the butter untill soft. Add the remaining
butter and meat and cook for approx 2 minutes
stir in the sour cream and season well, using
plenty of pepper. Heat to temperature and
serve at once with rice.
